If you handle food as part of your work, or simply want to know more about E. coli food poisoning, then this article will help you understand more about what E. coli is, the causes of E. coli and how to prevent it from contaminating food and drink products.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-is-e-coli\">What is E. coli?<\/h2>\n\n\n\n<p>E. coli &#8211; full name Escherichia Coli &#8211; is a type of bacteria that\u2019s usually found in the intestines of humans and animals. Most strains of E. coli are harmless to people but others can cause serious gastrointestinal illness &#8211; or <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/types-of-food-poisoning\/\" target=\"_blank\" rel=\"noreferrer noopener\">food poisoning<\/a>. Most foodborne E.coli is caused by the strain E. coli O157.<\/p>\n\n\n\n<p>E. coli O157 is often passed to humans through raw or undercooked meat, contaminated vegetables, contaminated water and unpasteurised milk. It can also be passed from person-to-person or from animal-to-person.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"685\" height=\"295\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2024\/07\/e-coli2-1.jpg\" alt=\"\" class=\"wp-image-75804\"\/><\/figure><\/div>\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-causes-e-coli\">What Causes E. coli?<\/h2>\n\n\n\n<p>E. coli originates in the intestines of humans and animals &#8211; most commonly cattle &#8211; and causes food poisoning when a person consumes food or drink contaminated with the bacteria.<\/p>\n\n\n\n<p>E. coli can be contagious and spread from person-to-person or from animal-to-person. It\u2019s also more likely to develop on food products in the temperature <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/what-is-the-temperature-danger-zone\/\" target=\"_blank\" rel=\"noreferrer noopener\">danger zone<\/a>, between 8 \u00b0C and 60 \u00b0C.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"685\" height=\"295\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2024\/07\/e-coli-1.jpg\" alt=\"\" class=\"wp-image-75805\"\/><\/figure><\/div>\n\n\n<p>E. coli is often caused by:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Eating contaminated food<\/strong> &#8211; in particular, raw vegetables, fruit, unwashed salad or undercooked meat.<\/li>\n\n\n\n<li><strong>Drinking contaminated water <\/strong>&#8211; if the water supply has been inadequately treated, then E. coli bacteria may remain. This includes water for drinking or water used for cooking.<\/li>\n\n\n\n<li><strong>Touching infected animals<\/strong> &#8211; cattle are particularly susceptible to E. coli bacteria and people can catch E. coli by touching them or coming into contact with their faeces.<\/li>\n\n\n\n<li><strong>Touching infected people<\/strong> &#8211; E. coli can be spread by coming into contact with people who already have E. coli food poisoning.<\/li>\n\n\n\n<li><strong>Contaminated surfaces <\/strong>&#8211; improper handwashing, especially after using the toilet and after handling muddy vegetables, can easily cause cross-contamination.<\/li>\n\n\n\n<li><strong>Undercooked meat<\/strong> &#8211; specifically undercooked beef products, such as burgers.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-e-coli-and-food-poisoning\">E. coli and Food Poisoning<\/h2>\n\n\n\n<p>The type of E. coli that causes food poisoning is E. coli O157. This strain of E. coli bacteria is harmful to humans and can cause serious gastrointestinal illness if consumed.<\/p>\n\n\n\n<p>E. coli O157 produces a toxin which causes illness. In the worst cases, this toxin can destroy red blood cells and lead to further complications, such as hemolytic-uremic syndrome (HUS) and kidney failure.<\/p>\n\n\n\n<p>Symptoms of E. coli O157 food poisoning can emerge anytime in the fortnight after consuming contaminated food or water and include stomach cramps, diarrhoea and fever. This applies to both in the workplace and at home. To prevent E. coli, always follow the actions below:<br><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Wash your hands properly<\/strong> &#8211; it\u2019s essential you wash your hands before handling food, after handling raw or muddy food, after contact with animals and after using the toilet. <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/7-steps-of-hand-washing-poster\/\" target=\"_blank\" rel=\"noreferrer noopener\">Effective handwashing<\/a> prevents cross-contamination of harmful E. coli bacteria.<\/li>\n\n\n\n<li><strong>Wash vegetables, salad and fruit thoroughly <\/strong>&#8211; before using them for cooking, ensure all fruit, vegetables and salad ingredients are <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/washing-food\/\" target=\"_blank\" rel=\"noreferrer noopener\">washed in clean water<\/a> to remove any soil debris, which may contain E. coli bacteria.<\/li>\n\n\n\n<li><strong>Keep raw meat separate from cooked food <\/strong>&#8211; raw meat, particularly poultry, must be handled and stored away from other food products. Always wash your hands and utensils after handling raw meat and ensure it\u2019s stored in a sealed container, ideally at the <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/fridge-shelves-storing-food\/\" target=\"_blank\" rel=\"noreferrer noopener\">bottom shelf of the fridge<\/a>.<\/li>\n\n\n\n<li><strong>Cook food thoroughly<\/strong> &#8211; in particular meat and <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/egg-safety-faqs\/\" target=\"_blank\" rel=\"noreferrer noopener\">eggs<\/a>. Food must reach a core temperature of at least 70 \u00b0C in order to kill any E. coli bacteria on it. Thorough cooking ensures harmful food poisoning bacteria are destroyed.<\/li>\n\n\n\n<li><strong>Store food correctly <\/strong>&#8211; <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/safe-temperatures-for-food-storage\/\" target=\"_blank\" rel=\"noreferrer noopener\">chilling cooked food<\/a> to below 8 \u00b0C as soon as possible after cooking &#8211; ideally within 90 minutes &#8211; will reduce the amount of time E. coli bacteria has to develop.&nbsp;<\/li>\n\n\n\n<li><strong>Avoid unpasteurised or untreated liquids <\/strong>&#8211; such as raw milk, juices and untreated water. The pasteurisation process used for milks and juices kills off harmful bacteria, as does the treatment done to tap and bottled water.<\/li>\n\n\n\n<li><strong>Keep your kitchen clean<\/strong> &#8211; to prevent <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/avoiding-cross-contamination-in-the-kitchen\/\" target=\"_blank\" rel=\"noreferrer noopener\">cross-contamination<\/a>, ensure all surfaces and utensils are washed between uses, including chopping boards, knives and pans. In the home, remember to clean your reusable shopping bags too.<\/li>\n\n\n\n<li><strong>Pay attention to use by dates <\/strong>&#8211; the <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/use-by-best-before-dates-difference\/\" target=\"_blank\" rel=\"noreferrer noopener\">use by date<\/a> on a food product indicates when the food becomes no longer safe to eat. You should not eat, cook or freeze food if the use by date has passed, even if you think it looks fine, as harmful E. coli bacteria cannot be seen or smelled.<\/li>\n\n\n\n<li><strong>Defrost foods safely <\/strong>&#8211; always <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/defrost-food-safely\/\" target=\"_blank\" rel=\"noreferrer noopener\">defrost food<\/a>, especially meat, in the fridge to ensure it never reaches room temperature and remains chilled at all times. Never defrost meat on the counter or cook it when partially defrosted.<\/li>\n\n\n\n<li><strong>Never prepare or handle food if you\u2019re ill<\/strong> &#8211; if you\u2019re unwell with any of the <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/food-borne-diseases\/\" target=\"_blank\" rel=\"noreferrer noopener\">symptoms of food poisoning<\/a>, such as diarrhoea or stomach cramps, then you must not handle food as you risk transferring food poisoning bacteria from yourself to the food.<\/li>\n<\/ol>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><em>E. coli O157 is a harmful strain of bacteria that causes food poisoning, which is why it\u2019s so important to control when handling food.
