The aim is to achieve a level 5 rating, which shows the public that your food is prepared, handled and served in the most hygienic way possible. When an inspector visits, they\u2019ll be looking at three key areas:<\/p>\n<ol>\n<li><strong>How hygienically food is handled.<\/strong><\/li>\n<li><strong>The condition of your premises.<\/strong><\/li>\n<li><strong>How you manage and document food safety.<\/strong><\/li>\n<\/ol>\n<p>If you do not score highly on any one of these areas then your food business will receive a low&nbsp;<a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/food-hygiene-rating-scheme-faqs\/\" target=\"_blank\" rel=\"noopener noreferrer\">FHRS rating<\/a>. To achieve a 5 star food hygiene rating you\u2019ll need to make sure that you can put a tick next to each of the following:<\/p>\n<h3>Your Premises<\/h3>\n<ul>\n<li>Do you check your premises regularly for pests?<\/li>\n<li>Do you have a pest control system in place?<\/li>\n<li>Do you have separate sinks for dish washing and hand washing?<\/li>\n<li>Do you regularly clean behind equipment?<\/li>\n<li>Do your fridges and freezers have thermometers?<\/li>\n<li>Do you have clean and tidy storage areas?<\/li>\n<li>Do you maintain equipment regularly?<\/li>\n<\/ul>\n<h3>Food Safety Management System<\/h3>\n<ul>\n<li>Do you have a food safety system in place (<a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/haccp-decision-tree\/\" target=\"_blank\" rel=\"noopener noreferrer\">HACCP<\/a>\/SFBB)?<\/li>\n<li>Can you provide evidence of all your food safety procedures?<\/li>\n<li>Do you have a cleaning schedule?<\/li>\n<li>Do you cook and hold food at the correct temperature?<\/li>\n<li>Do you use food&nbsp;probes and keep them clean and calibrated?<\/li>\n<li>Are staff fully trained?<\/li>\n<li>Do you follow the correct hand washing procedures?<\/li>\n<\/ul>\n<h3>Food Safety Procedures and Practices<\/h3>\n<ul>\n<li>Do workers change into protective clothing before work?<\/li>\n<li>Do workers keep their hair back and\/or wear a hair net or hat?<\/li>\n<li>Do you have a first aid kit in the workplace?<\/li>\n<li>Do you keep staff sickness records?<\/li>\n<li>Do you have a stock control procedure?<\/li>\n<li>Have you got colour coded chopping boards?<\/li>\n<li>Do you follow safe thawing practices?<\/li>\n<li>Do you have separate preparation areas for raw and ready to eat foods to prevent <a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/avoiding-cross-contamination-in-the-kitchen\/\" target=\"_blank\" rel=\"noopener noreferrer\">cross contamination<\/a>?<\/li>\n<li>Is there soap and paper towels in the toilets?<\/li>\n<li>Do you use single-use cloths?<\/li>\n<li>Are temporary food preparation areas kept in the same condition as permanent ones?<\/li>\n<\/ul>\n<p><a href=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2014\/12\/food-premises-checklist-high-speed-training.pdf\" target=\"_blank\" rel=\"noopener noreferrer\"><button>Free Self Inspection Checklist Template &#8211; Download Here<\/button><\/a><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7304\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2016\/05\/electrical_appliances_kitchen.jpg\" alt=\"Electrical Appliances in a Restaurant Kitchen \" width=\"685\" height=\"295\"><\/p>\n<hr>\n<h2>Implementing a Successful HACCP System<\/h2>\n<p><strong>HACCP (Hazard Analysis and Critical Control Point)<\/strong> is a food safety system that is used for managing risks in the food industry \u2013 similar to doing a risk assessment. To implement a HACCP system you need to identify the hazards, determine effective control measures and make decisions about what is and isn\u2019t working. Having a successful HACCP system in place is essential if you are to prove to food hygiene inspectors that you are doing everything within your control to ensure the food you sell is safe to eat.<\/p>\n<h4>There are 12 key steps to developing your HACCP system:<\/h4>\n<ol>\n<li><strong>Assemble a HACCP team<\/strong> \u2013 put together a competent group of people who can cover all areas of the business and identify all of the hazards.<\/li>\n<li><strong>Describe the product<\/strong> \u2013 what products does your business produce?<\/li>\n<li><strong>Identify the product&#8217;s intended use<\/strong> \u2013 what methods do you use when producing your product? What are the storage conditions and shelf life? Are there any legal requirements to consider? What are the risks at each stage?<\/li>\n<li><strong>Construct a flow diagram<\/strong> \u2013 draw an accurate diagram showing each stage of the production process.<\/li>\n<li><strong>Do an on-site verification of the flow diagram<\/strong> \u2013 check that your flow chart matches up to the production process by walking through it.<\/li>\n<li><strong>Conduct a Hazard Analysis<\/strong> \u2013 identify all the potential hazards at each stage of the production process and consider their control measures.<\/li>\n<li><strong>Determine critical control points (CCPs)<\/strong> &#8211; which points in the process are the most important in regards to food safety? Where can you prevent, eliminate or reduce a hazard before it affects the next stage of the process?<\/li>\n<li><strong>Establish critical limits for each CCP<\/strong> \u2013 how can you measure when a hazard has gone from acceptable to unacceptable?<\/li>\n<li><strong>Establish a monitoring system for each CCP<\/strong> \u2013 how can you ensure that your control measures are keeping the hazards under control?<\/li>\n<li><strong>Establish corrective actions<\/strong> \u2013 what will happen if the critical control points fail and there is a loss of control?<\/li>\n<li><strong>Establish verification procedures<\/strong> \u2013 how can you confirm that your procedures are working correctly?<\/li>\n<li><strong>Establish documentation and record keeping<\/strong> \u2013 how are you going to record your HACCP system? Without appropriate knowledge on food safety, it is unlikely that you will score highly on your inspection, as staff will not be demonstrating best practice at the time of the visit.
