These individuals must be aware of the ingredients they consume and have to be able to easily identify gluten ingredients on food labels. Therefore, it\u2019s crucial that people working in food production and manufacturing understand which ingredients contain gluten, and how to correctly label their products.<\/p>\n\n\n\n<p>In this article, we will look at which foods and ingredients contain gluten, and the laws regarding labelling products as \u2018gluten free\u2019. We will also explore why gluten can be difficult for food business operators to label, and the allergen labelling laws.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-is-gluten\">What is Gluten?<\/h2>\n\n\n\n<p>Gluten is a blanket term used for the family of storage proteins that are found in raw materials such as wheat, rye and barley. Unfortunately, millions of people suffer from unpleasant &#8211; and potentially dangerous &#8211; symptoms after consuming foods that contain gluten.<\/p>\n\n\n\n<p>Coeliac disease is the most severe reaction to gluten, and isn\u2019t classed as an allergy or an intolerance. It is an autoimmune disorder wherein the body\u2019s immune system attacks itself after consuming gluten. This can damage the lining of the gut and intestines.<\/p>\n\n\n\n<p>Many people are also gluten intolerant, which means they may experience pain, bloating or sickness after eating foods and ingredients which contain gluten. A gluten intolerance isn\u2019t life threatening, however, many people avoid the protein in order to prevent the unpleasant symptoms they might experience.&nbsp;<\/p>\n\n\n\n<p>Common gluten foods include:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pasta.<\/li>\n\n\n\n<li>Breads.<\/li>\n\n\n\n<li>Breakfast cereals.<\/li>\n\n\n\n<li>Breaded meat.<\/li>\n\n\n\n<li>Dumplings.<\/li>\n\n\n\n<li>Salad dressings.<\/li>\n<\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"685\" height=\"295\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2022\/01\/1.png\" alt=\"\" class=\"wp-image-58623\"\/><\/figure><\/div>\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-which-ingredients-contain-gluten\">Which Ingredients Contain Gluten?<\/h2>\n\n\n\n<p>Individuals who must avoid products that contain gluten often rely heavily on the ingredients label to tell them which ingredients contain gluten. Gluten is not listed explicitly as an allergen on a product label in the UK, it will appear in the form of the gluten-containing ingredient itself. The most common is <strong>wheat, barley <\/strong>or <strong>rye<\/strong>. <\/p>\n\n\n\n<p>For example, the label on bread might say <strong>wheat <\/strong>flour, water, yeast, salt. The emphasised word indicates which ingredient contains the allergen. We\u2019ll look at other ingredients that contain gluten below.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-ingredients-containing-gluten\">Ingredients Containing Gluten<\/h4>\n\n\n\n<p>Below is the list of ingredients that contain gluten. Many of these appear in common and popular foods, and must be highlighted or bolded on ingredient labels.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Barley.<\/li>\n\n\n\n<li>Barley flour.<\/li>\n\n\n\n<li>Barley malt.<\/li>\n\n\n\n<li>Barley wheat.<\/li>\n\n\n\n<li>Bulgar wheat.<\/li>\n\n\n\n<li>Cous cous.<\/li>\n\n\n\n<li>Dinkle.<\/li>\n\n\n\n<li>Durum wheat.<\/li>\n\n\n\n<li>Einkorn.<\/li>\n\n\n\n<li>Emmer.<\/li>\n\n\n\n<li>Kamut.<\/li>\n\n\n\n<li>Modified wheat starch.<\/li>\n\n\n\n<li>Pearl barley.<\/li>\n\n\n\n<li>Rusk.<\/li>\n\n\n\n<li>Rye.<\/li>\n\n\n\n<li>Rye Flour.<\/li>\n\n\n\n<li>Semolina.<\/li>\n\n\n\n<li>Spelt.<\/li>\n\n\n\n<li>Triticale.<\/li>\n\n\n\n<li>Wheat.<\/li>\n\n\n\n<li>Wheat flour.<\/li>\n\n\n\n<li>Wheat bran.<\/li>\n\n\n\n<li>Wheat protein.<\/li>\n\n\n\n<li>Wheat rusk.<\/li>\n\n\n\n<li>Wheat starch.<\/li>\n<\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"685\" height=\"295\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2022\/01\/2.png\" alt=\"\" class=\"wp-image-58624\"\/><\/figure><\/div>\n\n\n<h4 class=\"wp-block-heading\" id=\"h-gluten-free-ingredients\">Gluten Free Ingredients<\/h4>\n\n\n\n<p>It\u2019s important to note that when a product is labelled \u2018gluten free\u2019, it doesn\u2019t necessarily mean that it contains no trace of gluten. Rather, it means that particular product contains a legally acceptable level of gluten.&nbsp;<\/p>\n\n\n\n<p>Foods that are labelled \u2018gluten free\u2019 must meet the requirements that are set in <a href=\"https:\/\/eur-lex.europa.eu\/eli\/reg_impl\/2014\/828\/oj\" target=\"_blank\" rel=\"noreferrer noopener\">Regulation (EU) No. 828\/2014<\/a>. The legislation outlines when it is acceptable for a product to be labelled \u2018gluten free\u2019 &#8211; i.e., it must contain no more than 20mg\/kg gluten as sold to the customer. It also states that a product can be labelled as \u2018very-low gluten\u2019 as long as it contains no more 100mg\/kg gluten as sold to the customer. However, the ingredient that does contain gluten &#8211; no matter how small an amount &#8211; must still be highlighted or bolded on its label.&nbsp;<\/p>\n\n\n\n<p>You can find out more detailed guidance on the Food Standards Agency website, <a href=\"https:\/\/www.food.gov.uk\/business-guidance\/allergen-labelling-for-food-manufacturers\" target=\"_blank\" rel=\"noreferrer noopener\">here<\/a>.<\/p>\n\n\n\n<p>As coeliac disease and gluten intolerances are such a prevalent issue in the UK, food businesses have developed many \u2018gluten free\u2019 alternatives that can ensure those who cannot consume gluten, may still maintain a balanced diet.&nbsp;<\/p>\n\n\n\n<p>You can buy gluten free pasta or gluten free bread, however, there are also alternative ingredients that can be used. These include:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cornflour, corn starch or maize.<\/li>\n\n\n\n<li>Ground almonds.<\/li>\n\n\n\n<li>Buckwheat.<\/li>\n\n\n\n<li>Potato starch or potato flour.<\/li>\n\n\n\n<li>Polenta flour.<\/li>\n\n\n\n<li>Rice flour.<\/li>\n\n\n\n<li>Tapioca starch.<\/li>\n\n\n\n<li>Teff flour.<\/li>\n<\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"685\" height=\"295\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2022\/01\/3.png\" alt=\"\" class=\"wp-image-58625\"\/><\/figure><\/div>\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-why-can-gluten-be-difficult-for-manufacturers-to-label\">Why Can Gluten Be Difficult for Manufacturers to Label?<\/h2>\n\n\n\n<p>&#8216;Gluten&#8217; is no longer allowed to be labelled as an allergen, instead the cereals which contain gluten (listed above) should be emphasised in the ingredient list. This is why it is crucial for food manufacturers to know which ingredients contain gluten, even if it can be difficult to label.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-allergen-labelling-laws\">Allergen Labelling Laws<\/h4>\n\n\n\n<p>Prepacked food refers to any food that is put into packaging by a manufacturer. This is called Natasha\u2019s Law.<\/p>\n\n\n\n<p>This law has been introduced after Natasha Ednan-Laperouse died in 2016 from consuming a baguette that contained sesame seeds \u2013 a substance that she was highly allergic to. The baguette, purchased from Pret a Manger, contained no reference to the presence of the allergenic ingredient on its packaging.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"685\" height=\"295\" src=\"https:\/\/www.highspeedtraining.co.uk\/hub\/wp-content\/uploads\/2022\/01\/4.jpg\" alt=\"\" class=\"wp-image-58627\"\/><\/figure><\/div>\n\n\n<p>While this law change primarily affects hospitality and retail businesses, it is also relevant to food manufacturers. For example, if a manufacturer supplies ingredients to a hospitality business, they may need to update the system they use in order to instantly update an ingredients list if a product\u2019s allergenic profile changes. Only stating \u2018gluten\u2019 is not permitted; therefore, knowledge of which ingredients contain gluten listed in this article is essential to complying with the law. For example, <strong>wheat <\/strong>flour &#8211; wheat flour (gluten) would not be acceptable.<\/p>\n\n\n\n<p>It can be difficult for food manufacturers to understand exactly which ingredients contain gluten and therefore, need highlighting on labels. For example, flour can be made from different raw materials &#8211; some of these contain gluten, and others are gluten free.
