Everyone who works with food and drink has a duty to ensure that any food produced is safe. This Level 2 TACCP and VACCP training provides you with knowledge of TACCP, including how it works with HACCP and VACCP as a food safety management system. You will understand the legal requirements and best practice guidance on how to minimise the threat of food fraud, malicious contamination and other attacks on the food supply chain.

By understanding threat detection across the food supply chain, you will know how to raise awareness of threats and keep your workplace safe. This course explains the threats you may face, where they come from and how applying Threat Assessment Critical Control Points (TACCP) and Vulnerability Assessment and Critical Control Points (VACCP) analysis can help prevent and mitigate food safety incidents.

Module 1: Introduction to TACCP and VACCP

What is TACCP?, food safety management systems, key terms, what are VACCP and TACCP?, benefits of TACCP and VACCP, why are TACCP and VACCP Important?, how do TACCP and VACCP work with HACCP?, food safety legislation, enforcing the law, PAS 96:2017, who needs to comply? and training requirements.

Module 2: Types of Food Threats

Economically motivated adulteration (EMA), adulteration, substitution and dilution, mislabelling, counterfeiting, malicious contamination, extortion, espionage and cyber crime.

Module 3: The Attacker

What determines the success of a deliberate attack?, types of attacker, opportunist, extortionist, extremist, disgruntled individual, professional criminals, cyber criminals and irrational individual.

Module 4: TACCP and the Business

Why is threat detection important to a business?, an overview of the TACCP process and assessment of risk.

Module 5: TACCP and Food Defence

Site security and food defence, an overview of a food supply chain, identifying the vulnerable stages in the supply food chain and incident management procedure.

The online assessment is taken on completion of the training material. You will be asked 20 multiple choice questions with a pass mark of 80%. The answers are marked automatically so you will instantly know whether you have passed. If you don't pass don't worry! You can take the test as many times as you need with no extra charge.

This course is designed for anyone supervising food manufacturing, mass catering or supply chain distribution and needs to understand how to minimise the threat of food fraud, deliberate contamination and other attacks within their supply chains. This is often the responsibility of employers, managers or supervisors.
