Why take this course?

Each year in the UK, approximately 2.4 million cases of foodborne illness occur. The risk of serious ill health from food is increased where employees do not have the information or training necessary to enable them to adopt good food hygiene and safety practices.

Employers have a legal duty to ensure staff are given sufficient information, instruction and training in relation to food hygiene and safety.

This level 1 course offers employees a comprehensive overview of the basic food safety principles and practices, such as food hazards, allergen awareness, how to properly store foods and effective cleaning. By taking this course, employees will learn about the serious ill health effects of poor food hygiene and understand their responsibilities and actions required to comply with food safety law.

Module 1: Your Responsibilities for Food Hygiene and Safety

This module outlines your responsibilities and the actions you must take to ensure you comply with food safety law. It explains the purpose of food safety management systems, including HACCP, and the role of Environmental Health Officers.

Module 2:  Food Safety Hazards

This module defines the four categories of food safety hazards, including microbial, allergenic, physical and chemical, along with cross-contamination. It outlines each of these and how to prevent the contamination of food from occurring.

Module 3: Food Storage

This module discusses the importance of holding and storing foods at the correct temperatures. It includes the difference between high and low-risk foods, best before and use-by dates and proper stock rotation methods.

Module 4: Cleaning and Personal Hygiene

This module outlines effective cleaning and personal hygiene practices and their importance in food safety and the prevention of cross-contamination. This includes pest control and waste management.

The online assessment is taken on completion of the training material. 

You will be asked 20 multiple choice questions with a pass mark of 80%. 

The answers are marked automatically so you will instantly know whether you have passed. If you don't pass don't worry! You can take the test as many times as you need with no extra charge.


This Level 1 Food Hygiene and Safety course is designed for workers who are not directly involved with the preparation or handling of high-risk foods, but work in an environment where food is present or handled elsewhere. This also includes those who work with wrapped or pre-packaged foods. For example:

  • Front of house employees.
  • Checkout staff.
  • Bar workers.
  • Food delivery drivers and riders.
  • Kitchen porters.
  • Low-risk food retailers (e.g. newsagents, sweet shops).
  • Warehouse staff.

If your role involves directly handling or preparing food, then you need to take Level 2 Food Hygiene and Safety (available for retail, catering, and manufacturing) in order to comply with food handlers’ legal obligations.

If you are a manager or supervisor in a food business, you will require Level 3 Food Hygiene and Safety.

Paul Turner is a Senior Environmental Health Officer at North Yorkshire Council with a great passion for the highest standards of food safety. As well as holding a degree in Environmental Health and a HND in Applied Science (Biology) Paul has completed the following: Certificate of Registration with Environmental Health Officers Registration Board, Assessment of Professional Competence (CPD), ISO 9000:2000 Lead Auditor qualification and has Chartered status from CIEH.

Paul has 30 years of experience in the sector working for local authorities and is on the Food Standards Agency’s (FSA) working group and is a Local Authority member of the FSA group contributing to their Register a Food Business (RAFB) service.

Paul is an experienced public speaker on food safety who has developed and delivered training on behalf of the Food Standards Agency and others in the sector as he continues his drive to ensure the highest standards of food safety.

How do I access the training?

All of our training is done within your web browser - there are no apps to download or software to install.

After picking the courses you need and completing your purchase, you will receive a confirmation email. To access our courses yourself or to distribute them to others you just need to click the ‘Get Started’ button within the email and select which option you want. You will then be able to add the course(s) into an existing account, or create a new account.


Can I buy training for my team?

Of course just add the amount of courses you need and follow the purchase process. Please do be aware that it is one course per learner so they will all need their own course.

Is there a time limit on completing the course?

No, we want our courses to work around you so there’s no time limit in which you must complete the training after making a purchase. You can also split your training over as many different sessions as you wish, as course progress is saved as you make your way through the training. You’re free to learn entirely at your own pace.
